Sustainable Innovator of the Year – Arima Hotel, Spain

Hidden among the trees in the Miramón Forest of San Sebastián, Arima Hotel’s building structure is named as a prototype of zero-energy buildings, marked by the European Union as a mandatory standard to mitigate the effects of climate change. Its savings in CO2 emissions compared with a standard construction are similar to the carbon that 15,000 trees would absorb annually. From clean energy systems, sulphate-free toiletries to a menu inspired by locally-grown ingredients at veggie-focused fine dining restaurant Misura, the hotel has set a new benchmark in terms of environmental and social responsibility, as evinced by its rigorously audited Passivhaus qualification. Overall, 77 per cent of Arima Hotel’s energy needs are fulfilled from aerothermal and geothermal power.

Stay Small, Stay Considerate Award – Lefay Resorts, Italy

Created around the philosophy that personal wellness should never overlook environmental wellness, Lefay Resorts is fully committed to operating in the most responsible way possible, whilst creating a haven of luxury and wellbeing. As the first Italian hospitality company to sign an agreement with the Italian Ministry of the Environment aimed at neutralising C02 emissions, both its hotels in Lake Garda and The Dolomites (which opened in August 2019) are 100% carbon neutral. The company offsets its direct CO2 emissions and those of travelling guests through the purchase of CERs credits in accordance with the Kyoto protocol. Established from the outset with landscape protection and energy efficiency at the fore, great efforts are also taken to ensure the guest experience is grounded in sustainably practices. All the products used in its spa are vegan, free from parabens, SLES (a detergent that causes skin irritation), colourings and preservatives. Lefay also handpicks its food suppliers ensuring they adhere to strict environmental standards with 66% of ingredients sourced directly from the local provinces. The company’s results and objectives are summarised in an annual Sustainability Report that is published on its website.

Most Inspirational Interior Design – Castello di Reschio, Italy

Nestled amongst rolling hills on Italy’s Umbria-Tuscany border, Castello di Reschio is a thousand-year old castle which has been meticulously restored and stylishly reimagined by architect Count Benedikt Bolza and his wife, Nencia Corsini. The hotel’s rooms and suites have been imbued with personality and panache, thanks to an organic approach to contemporary design coupled with subtle references to the fascinating characters who once lived here. Count Benedikt designed much of the furniture and lighting himself and sourced rare pieces from Italy’s below-the-radar antiques markets and art fairs.

Most Intimate Bedroom – Cap Rocat, Mallorca

Housed within a striking 19th-century military fortress, Cap Rocat’s three Sentinel suites are wonderfully secluded, carved out of the rocks that the fortress was built into, with private infinity pools featuring unobstructed views of Palma Bay. The three intimate rooms, which once served as watchtower spots, are each decorated with sumptuous king-sized beds, refined rugs, soft Mediterranean fabrics and a private terrace. Maps are given to guests upon check in so they can find their way along the hotel’s secret corridors and pathways, some still partly covered with plants.

Guests are taken on a half day trip to Canterbury’s forest valleys to support the conservation efforts for the critically-endangered orange-fronted Kakariki, a native parrot whose numbers are estimated at fewer than 300. Once a year, by special arrangement, guests can even release one of these treasured birds into the forest. A portion of every flight from the Conservation Experience is donated to the recovery programme.

Held in the resort’s darkened Klass & Brass private dining room, the six-course sensory dinner experience has been thoughtfully curated to focus on texture, aroma and flavour, while being served and guided by children from the orphanage. The aim is to help provide the children with employment opportunities and basic hospitality training while raising awareness for the vision-impaired people of Indonesia. Chef Collins co-founded the Charleston Wine + Food Festival in 2006 with the objective to spotlight Charleston and the Lowcountry’s diverse culinary and hospitality community. In 2019, he launched a unique menu concept that takes guests from South Carolina’s humble beginnings to Charleston’s Southern-modern foodie scene. Michael’s proactive attitude has been demonstrated though arranging a leg massage for a guest who returned from the day’s exploration with a leg pain, and anticipating the needs of a cancer patient who was checking in with a unique welcome amenity of detox juices, sun cream and hat. Always looking out for his guests, Michael has accompanied a Portuguese guest to the hospital to help translate and make sure that the guest was well-taken care of. Michael showed true dedication when two guests fell in love at Le Barthélemy and spontaneously decided to get married – he organised the entire wedding event, from master of ceremony to musicians and floral arch, within 24 hours.

From a secret garden with beehives producing honey for the hotel’s breakfast table to the basement Spa Guerlain with its medieval stone vaults and impressive display of Guerlain perfume bottles, everything about this hotel exudes intimacy and charm.

Most ‘Liked’ Hotel of the Year – Halcyon House, Australia

Found on Instagram as @_halcyonhouse, it is without a doubt that Halcyon House‘s colourful and eclectic interiors and idyllic beachside setting make it so Instagrammable. The hotel is often lauded for its ‘Instagram-worthy interiors’ including its unique mix of ocean blue décor juxtaposed with bold clashing prints, vintage cameos and beachside paraphernalia. Everything about the hotel is photogenic from the blue and white wicker chairs in Halcyon’s Paper Daisy restaurant to the blue and white candy-striped loungers next to the pool area.

Independent Minds: Manfredi Rizzuto, Susafa

The ancient agricultural traditions of centuries-old rural Sicily are very much alive at Susafa, a converted farmhouse which has been lovingly restored by owner Manfredi Rizzuto and his brother, Tommaso. Living and working in harmony with nature’s bounty, this family-run estate sets new standards when it comes to regenerative sustainability thanks to the Rizzuto passion for everything seasonal, local, and cultural.

Freshly picked herbs and vegetables from the gardens. Olives harvested and pressed by the family for their own organic, olive oil. Handpicked regional wines for guided tastings to accompany ravioli made from scratch. Susafa gives guests more than a taste of the Sicilian countryside, it is a true immersion in farm-to-table living with every home comfort imaginable thanks to the Rizzuto family presence.

Cultivation, restoration, and regeneration are at the heart of the Rizzuto philosophy. With a deep respect for the environment, the land and its rich history are the main sources of inspiration for Manfredi, who envisages a self-sufficient, zero-emissions future for Susafa. Soon to launch an e-commerce site dedicated to Susafa-grown produce, along with a ‘field adoption’ scheme where customers can monitor their harvests, Manfredi is already well on his way to bringing his vision to fruition. Forward thinking yet firmly rooted in the rustic way of life, Manfredi is sowing the seeds for a boutique experience like no other.

What does being ‘Independently Minded’ as an hotel owner mean to you?

The tourism industry is more than ever oriented towards travel as an experience, and the experience itself today is that of living different cultures. The relationship between the lifestyle of the place we visit and the journey itself complement each other. After all, travel cannot be a complete experience if there is no link with local culture and customs. Therefore, a hotel cannot simply be an anonymous structure independent of the context that surrounds it – hospitality must be subordinate to its environmental context. In this way, being independent and independently minded is our fortunate condition and the only possible way to offer a truly unique experience.

From the guest’s point of view, the value of travel is in discovering something different. Susafa reflects the culture of its land and manages to convey its past, present and future in connection with customs, habits and knowledge of all the people involved. The result is a genuine experience. It is then the ability of the staff to make sure that the experience is positive and special. My contribution to this approach to travel is wholehearted, as I believe is that of any hotel owner who embraces the idea of ​​being independent.

How would you describe your own perfect luxury experience?

Experience makes all the difference, and I put it first. I also think that the ability to anticipate the guest’s needs is an important requirement, or at least being available as much as possible. The uniqueness of the offer, friendliness and knowledge of the staff, cleanliness and quality of the furnishings, details and additional elements, such as good food, are all distinctive features of a luxury experience.

Today there is a lot of talk about sustainability, but most of the time it is a marketing strategy and hotels think that by putting a natural soap or a sign not to waste water, they have done their part. It disturbs me to discover that what you have been told is actually nothing more than a commercial façade, and it’s even worse when the staff are not knowledgeable about the topics the company is advertising.

What was the inspiration behind the hotel, and where do you continue to find sources of inspiration?

I am strongly respectful of the environment. I look at landscapes with reverence and in every little detail I find inspiration. I think that the human ability to create beautiful surroundings is something extraordinary, and I think we have a duty to commit ourselves to making this happen. I am very fortunate to be part of a family of landowners and to have inherited the legacy of a virtuous farming community. I am fascinated by this history and am honoured to share it with as many people as possible.

I find inspiration in the idea of conserving and in some cases rebuilding agricultural traditions to be able to share our approach to the environment, nutrition and a genuine experience with guests who visit. This concept started with the renovation of the old farmhouses, buildings totalling about 2,000 square-meters and once used as warehouses, stables and workers’ accommodation.

Today guests can stay in finely furnished rooms equipped with every comfort, without having to give up the authentic style of the original structure. The granary was converted into a restaurant, and the cellar into a bar and lounge area. The next project involves staying in modern lodges positioned in the wheat fields or vegetable garden, in order to offer a 360-degree experience, immersed in nature.

If you only had 24 hours to get a taste for your hotel experience, what would you recommend a guest must do?

We recommend starting the day with some freshly squeezed fruit juice, with oranges or with organic apples (depending on the season) and a slice of tart with season fresh fruit, made by Rita. Our selection of cheese and bread is something you can’t miss out on.

The bread at Susafa is still made using an old variety of wheat cultivated in the property, which is stone milled and integral. We are still working on our ‘food laboratory’ project, a dedicated area using the old wood oven space, where we invite guests to experience a real traditional-professional kitchen every Thursday in our cooking classes – we plan to host these classes more frequently once the project has been finalised.

You absolutely must try our Schiacciata for lunch, an artisanal homemade sandwich with warm bread and fresh extra virgin olive oil, followed by an afternoon lounging by the pool with a signature cocktail in hand – my personal favourite is called Susafa, made with fresh orange juice, bitter liqueur from Etna, and rosemary. Continue your relaxation with an olive oil or cherry stone massage, before an aperitif on the terrace watching the sunset.

End the day with our tasting menu for dinner – Manfredo and Graziella based on the fresh vegetables picked every day from the vegetable garden, or the Sara menu based on fish (which is only available in July, August and September). We also recommend visiting Castellucci Miano and Tasca, the closest wineries to our farmhouse.

Cachoeira do Tigre Preto

No Parque Nacional da Serra Geral (Cânion Fortaleza), esconde-se uma das cachoeiras mais bonitas do Brasil. Estamos falando da idílica Cachoeira do Tigre Preto, formada pelas águas cristalinas do Arroio Segredo. 

A cachoeira é esplendorosa, exibindo um cenário naturalmente belo entre os paredões do canyon. As águas despencam a 250 metros de altura, formando uma sequência de três quedas incríveis!

Como ir à Cachoeira do Tigre Preto

Estacione o carro na entrada do Cânion Fortaleza, e depois percorra a “Trilha do Tigre Preto” – percurso pedestre de 3 km de extensão (ida e volta), com grau de dificuldade fácil. 

Para visualizar o lado mais bonito e imponente da cachoeira, é preciso atravessar o rio com água pelos joelhos. A paisagem é simplesmente magnífica (de encher os olhos!) e a caminhada costuma levar cerca de 1 hora (ida e volta). Recomendável contratar guia credenciado. Imperdível!

Cascata das Andorinhas

Alimentada pelas águas geladas do Arroio Perdizes, a Cascata das Andorinhas, com 200 metros de altura, está entre as mais belas atrações naturais do Cânion do Itaimbezinho.

A queda d’água é deslumbrante e o local impressiona pela beleza de seus paredões verticais, com até 720 m de profundidade e 6 km de comprimento. Enquadramento paisagístico de tirar o fôlego!

Como ir à Cascata das Andorinhas

Estacione o carro na entrada do Parque Nacional de Aparados da Serra, e percorra a seguir a “Trilha do Vértice” – percurso pedestre bem sinalizado de 1,4 km de extensão. A caminhada rende pouco mais de 30 minutos (ida e volta) com grau de dificuldade fácil. Não precisa contratar guia. 

Cachoeira Braço Forte

A Cachoeira Braço Forte fica escondida numa das gargantas do Cânion do Itaimbezinho. A queda livre de 40 metros de altura, termina numa lagoa propícia a banhos refrescantes.

A atração faz parte do famoso percurso pedestre “Trilha do Rio do Boi”, uma das mais deslumbrantes trilhas brasileiras, por ser realizada na fenda do Cânion Itaimbezinho, o mais vertical do país. 

Como ir à Cachoeira Braço Forte

Já avisamos: o trajeto para lá chegar é difícil, mas a paisagem envolvente compensa tudo! O percurso começa no posto de fiscalização do Parque Nacional dos Aparados da Serra e finaliza no ponto de alargamento do Rio do Boi. No total são 14 km de extensão (ida e volta), com grau de dificuldade elevado. Obrigatório contratar guia credenciado.

Cachoeira do Tio França

A Cachoeira do Tio França é mais um pedacinho do céu da região de Cambará do Sul. A queda livre com 12 metros de altura forma uma piscina natural deliciosa para mergulhos refrescantes, sobretudo nas tardes quentes de verão.

A cachoeira está localizada a menos de 3 km do centro de Cambará, numa propriedade particular chamada “Estância da Felicidade”. Além da natureza circundante, espere encontrar por aqui muita paz, sossego e tranquilidade.

O local ainda conta com um restaurante servindo comida típica gaúcha, feita na tradicional churrasqueira a lenha. Não deixe de experimentar a Parrilha Seu Carlos, com legumes da horta e a banana assada com doce de leite. Vai adorar!

Como ir à Cachoeira do Tio França

Siga a Estrada para o Lajeado da Margarida Zona Rural, e depois estacione o carro na entrada da Estância Felicidade. A partir daí basta seguir as placas que indicam o caminho para a cachoeira. A trilha é super fácil e a caminhada rende pouco mais de 15 minutos (ida e volta). Ideal para adultos e crianças. Não precisa contratar guia. 

Cascata dos Venâncios

Verdadeira obra-prima da natureza, a Cascata dos Venâncios tem lugar cativo na nossa lista das cascatas mais bonitas de Cambará do Sul.

Inserida na Fazenda Cachoeira (propriedade particular), as quatro quedas d’água da Cascata dos Venâncios são formadas pelo rio Camisas. No entorno há várias trilhas, além de mirantes naturais para contemplar a paisagem e tirar fotos lindas!

Como se isso não bastasse, aos fins de semana e feriados prolongados, ainda é possível se deliciar com o café da manhã colonial preparado pelos donos da fazenda. Um mimo!

Como chegar à Cascata dos Venâncios

Para chegar ao local visite a Fazenda Cascata dos Venâncios, um dos principais parques de ecoturismo da região, situado no município de Jaquirana (23 km de Cambará do Sul). Há várias placas na estrada indicando o caminho. Chega-se à cascata tranquilamente de carro. Acesso fácil. Não precisa contratar guia. 

O que levar quando visitar as cascatas

Quando visitar os parques das cachoeiras não se esqueça de levar:

– Roupas adequadas para caminhadas ao ar livre e chapéu

– Calçado confortável, apropriado para trekking
